Frédéric Bacquié and L'Almandin? A long story! Shortly after his training and a stint with Alain Ducasse, young Frédéric joined the L'Almandin brigade. He then developed his sense of rigour and precision before spending three years with Christopher Coutanceau (3* in the Michelin guide) in La Rochelle and discovering the products of the Atlantic. An Ariegeois accustomed to meat, game and robust sauces, the young chef discovered a passion for fish and the challenge represented by its fragility and delicacy. Back home, he then took over the head of the kitchen at Neptune, a starred restaurant in Collioure. A period of professional investment and personal sacrifice that allowed Frédéric to become, at 26 years old, the youngest starred chef in France and for the establishment to maintain its reputation. A challenge taken up until the closure and the transition to La Balette, still in Collioure. Free to make his own choices, Frédéric Bacquié defined his cuisine more precisely, followed his desires while remaining true to his convictions and was awarded a star in the Michelin guide nine months after his arrival. For more than ten years he regaled lovers of the Mediterranean before returning to L'Almandin, this time as chef.
